14-Day REBOOT – Day Five Dinner

For all my veggies lovers out there this one is for you! And if that first sentence doesn’t fit your description, don’t be turned off completely, the flavor in this dinner is definitely worth giving it a try. This meal is so satisfying because it is filled with some many leafy greens you are getting your daily dose of life giving and sustaining vitamins and minerals. Pair this with protein filled eggs, and it makes it simple to make. This is a super food packed meal that will leave you full until breakfast the next day, where you could have it again.

ASPARAGUS OMELETTE

INGREDIENTS
2 eggs
2-3 asparagus spears
¼ cup spinach leaves, chopped
1 Tbls onion, chopped
2 mushrooms, chopped
2 tsp butter
Salt & pepper

INSTRUCTIONS
STEP ONE:
In a skillet over medium heat, melt butter and add veggies. Sautee for 3-5 minutes.
Beat eggs in a bowl and add over the veggies. Using a wooden spoon to lift the sides and allow the uncooked egg to pour underneath.

STEP TWO:
Once the bottom is solid, use the wooden spoon to flip the omelette over, cooking for one minute.
Serve with fresh grapefruit slices.
