With all of the holiday festivities upon us, it’s difficult to stay on a healthy track. Parties at work, home, school and church offer an over abundance of sugary munchies and calorie-filled meals. The break room counters are covered with cookies and salty snacks. Unhealthy choices are everywhere you go. As a result, Americans pack on an average of 5-10 pounds during the holidays. And it’s no surprise that “losing weight” is the most popular New Years Resolution!
Stay on track. Minimize regrets. Make intentional choices about what you eat. And you can start with these delightful bites. They are super healthy, really impressive, and easy to make. Set out a plate full of Cucumber Hummus Bites at your next festive affair and watch them disappear.
INGREDIENTS
2 cans drained Garbanzo Beans (or make your own) – reserve liquid
2 cloves Garlic
2 Tbls Tahini or Almond Butter
S & P
1/4 c flat leaf Parsley
Juice of one Lemon (about 2 Tbls)
1 organic Cucumber
Red Pepper chopped
INSTRUCTIONS
STEP ONE:
Add all ingredients to a food processor and pulse until smooth. Check consistency and add bean liquid if it is too pasty.
STEP TWO:
Prepare the cucumber by using a fork to scrape down the outside, creating pinstripes all the way around. Then, slice into 1/2 inch thick circles.
STEP THREE:
Put hummus into a plastic bag, cut the tip off and pipe onto each cucumber slice. Top with a parsley leaf and red pepper slice.
