I’m sure you have seen the colorful bowls that look too amazing to eat, but the truth about pitaya bowls is that they are easy to make right in your own kitchen and they taste as good as they look! You don’t have to be an artist or a health coach to know how to make these delicious bowls. Today I will break down the basics and then you can have all of the creative liberties you want! There are so many different ways to make them with many different flavor combos but the base is always the same.
Pitaya bowls are made from dragon fruit which is a fruit that comes from a cactus like plant. They produce these beautiful pink flowers with a slightly sweet flavor and a crunchy texture. Dragon fruit is rich in antioxidants, high in vitamin C and B, calcium and omega-3 and omega-6 fatty acids.
We call this “Nice” cream in my house. All of your children will love the bright colors and fun toppings and it will have you dreaming of some tropical island far away from responsibilities. So close your eyes, take a bite and go to your happy place because a burst of flavor filled with tons of healthy nutrients is about to happen!
Ingredients:
- 1 banana chopped and frozen
- 1 cup mango chopped and frozen
- 1 cup dragon fruit (pitaya) chopped and frozen
- 1/4 cup coconut milk canned, full fat
Toppings (optional)
- coconut
- fresh fruit
- nuts or nut butters
- granola
- chocolate chips
Directions:

Add the frozen fruit to a blender. Allow to sit at room temperature for about 5 minutes to gently thaw before beginning to process.

Add coconut milk, and then process until very smooth and the mixture begins to fluff up.

Use a spoon to push down any chunks of fruit that aren’t blending.

Top with fruit, nuts, coconut, or nut butter, or just enjoy like soft serve ice cream!
