14-Day REBOOT – Day Nine Dinner
Breakfast for dinner makes me feel like I’m breaking rules. And I kinda like it. But the truth is, this meal is appropriate for anytime of day because of the healthy ingredients. For those of you who are gluten free, this is a great recipe tailored just for you, and it is also dairy free for those avoiding dairy products or just wanting to cut back. Pair these healthy delicious pancakes with some eggs and nitrate free turkey bacon or chicken sausage and you have the perfect balance of sweet and savory with no guilt, because it’s all good for you!

BLUEBERRY PANCAKES FOR DINNER
1 cup almond flour
1 Tbls coconut flour
1 tsp baking powder
Pinch of salt
¼ cup nut milk (almond, cashew or coconut)
4 drops stevia
⅓ cup blueberries
1 Tbls coconut oil for the pan
½ cup blueberries for topping
Mix dry ingredients together. Set aside.
Mix eggs, stevia and milk in a separate bowl.
Add wet to dry and whisk until just combined. Don’t overmix it.
In a medium heat skillet, melt oil and spoon ¼ cup batter in the skillet.
Cook for 2-3 minutes on the first side and about 45 seconds on the second.
Serve with fresh blueberries on top alongside organic chicken or turkey sausage (watch ingredients)
