14-Day REBOOT – Day Two Lunch

When you’re venturing into a new lifestyle of healthy foods, simplicity is key! No one wants to be in the kitchen with a complicated recipe. Once you try this soup, you’ll agree that fueling your body with healthy food can provide delicious flavor that does not require an enormous amount of time preparing and cooking. It’s easy combination of ingredients and smart use of time to prepare makes Cauliflower Soup on my personal repeat list.

CAULIFLOWER SOUP

INGREDIENTS
1 head cauliflower, chopped
2 Tbls curry
2 cans full fat coconut milk
1 cup coconut milk (refrigerated section)
Salt to taste


INSTRUCTIONS
STEP ONE:
Cut up cauliflower and place in soup pot with water. Cover and bring to a boil until all the cauliflower is fork tender.

STEP TWO:
Add the remaining ingredients to the pot and use an immersion blender to puree the soup. If you don’t have an immersion blender, add the cauliflower to a blender. Cover lid with dish rag and hold lid while blending. The heat will shoot the lid off if you don’t. Use caution.


Refrigerate or freeze leftovers to serve as a ROUND TWO on Day Three.
