14-Day REBOOT – Day Three Lunch
If you are looking for a light but protein filled lunch option then you must try this recipe. There is minimum prep time and the cook time is only five minutes!
What I love about this recipe is that you benefit from every ingredient. Whether it is protein, vitamins, minerals, and amino acids, every bite is not only delicious but you are feeding your body with only the good things, the healthy things. You will not only enjoy this meal, but you will be giving your body the boost it needs to finish the day strong.

CHICKEN LETTUCE WRAPS
1 cooked chicken breast, chopped or shredded
1 cup cabbage shredded
½ red pepper, slivered
1 clove garlic, minced
1 tsp fresh ginger, minced
1 Tbls amino acids
2 Tbls cilantro, chopped
1 Tbls chopped peanuts
Bibb lettuce leaves
Cook cabbage, pepper, garlic, ginger, and amino acids in 1 Tbls. coconut oil over medium heat for 5 minutes.
Add shredded chicken and cook until heated through and veggies are soft.
Let cool for 10 minutes, then serve in lettuce leaves and top with peanuts and cilantro.
Squeeze lime over the top for some extra zip.
Serve with leftover Cauliflower Soup.
