14-Day REBOOT – Day Twelve Dinner

Fish is one of the greatest sources of key nutrients that our body needs to rebuild, nourish and detox. Mahi Mahi is a delicious way to take your vitamins! It is loaded with all the vitamin Bs and Omega’s, and it is one of the simplest and most versatile proteins available. Your reboot will thank you for this simple, freestyle method of preparing a tasty meal in no time flat.

FREESTYLE FISH AND VEGGIES

INGREDIENTS
1 lb. Mahi Mahi
1 Tbls butter
2 cloves garlic, crushed
Salt and pepper to taste
1 cup chunked cabbage
1 cup sliced zucchini & summer squash
1/4 cup fresh diced tomatoes
1/2 cup sliced red bell pepper
Lemon slices

INSTRUCTIONS
STEP ONE:
Preheat oven to 400 degrees. Season both sides of fish with salt, pepper, garlic and other herbs of choice (my favorite is thyme). Place in the center of a piece of aluminum foil and top with a slab of butter. Surround the fish with veggies. Take a second piece of foil and seal over the top. Put on a cookie sheet to bake.

STEP TWO:
Cook in preheated oven for 10 minutes.  Pierce top of foil down the center and open up to cook another 10 minutes or less, depending on the doneness of the fish and veggies. 

STEP THREE:
Serve with fresh lemon slices. Enjoy.
