14-Day REBOOT – Day Eight Dinner

We all can agree that breakfast is a meal that can be eaten at anytime of the day. It’s comfort, energy, and nutritious all rolled up into one. And if you love eggs, then you will love this recipe. Take all the deliciousness of Mexican food and their rich flavors and mix it with organic, cage-free eggs your taste buds will be in heaven and your body will be satisfied. 

Another thing I love about this recipe is that it is simple. Simplicity in food always leads me to feel that I am eating things the way God intended. Minimal process and prep to a yummy meal, this is a great one to try.

Huevos Ranchero Frittata

INGREDIENTS
2 tsp olive oil
1 shallot, thinly sliced
¼ tomatoes, diced
4-6 eggs
¼ cup black beans, rinsed
1 avocado, sliced
2 Tbls cilantro
Salt
Dash of hot sauce – optional (watch ingredients)

INSTRUCTIONS
STEP ONE:
Preheat oven to 425 degrees
Saute shallot and tomatoes in medium heat skillet for 2-3 minutes.
Beat eggs and hot sauce in a bowl and add to the skillet. Add beans to the skillet.
Season with salt and pepper.

STEP TWO:
Cook eggs for about 2 minutes.
Put in oven for 5-7 minutes until eggs are set.
You may need to put the broiler on if the top doesn’t set or brown to your liking.
Cut into wedges and serve with cilantro and avocado slices on top.
