14-Day REBOOT – Day Seven Lunch

I love this soup recipe so much because of the savory ingredients that fill you up with all the right nutrients and leave all the bad stuff out of it. Getting soup from a restaurant is tricky because you really never know what they use to make the creamy texture. More than likely it is a lot of man-made ingredients that your body does not need.

This soup is not only delicious but so good for you. The meat provides the proteins that are so important to your body as a whole, and the leafy green vegetables paired with the onions and garlic strengthen and detox your body with their natural vitamins and minerals. And even better, the prep and active cook time only takes about 12 minutes.

ITALIAN SAUSAGE SOUP

INGREDIENTS
2 lbs turkey or chicken sausage
2 cups spinach, chopped
1 cup kale, chopped fine
1 small onion, diced
1/2 celery, chopped
2 Tbls parsley
2 cloves garlic, minced
½ cup white cannellini beans
1 quart chicken or vegetable broth

FuN additions:  1 cup chopped carrot

INSTRUCTIONS
STEP ONE:
Brown sausage in pot over medium heat.

STEP TWO:
Add spinach, kale, parsley, garlic, onion and broth to the pot and bring up to a simmer.

STEP THREE:
In a bowl, mash the beans with a fork or use blender to make smooth.

STEP FOUR:
After soup has simmered for 7 minutes, add bean puree. Warm thru and serve with a drizzle of olive oil on top.
