Back-to-school health and simplicity! Because every child and every adults’ first meal of the day should satisfy taste buds and energy requirements. Combining a morning oat with chia pudding is a fabulous breakfast. Make ahead ease and they are good in the refrigerator for up to 4 days. This recipe provides servings for 2, but if you double it, you’ll cover breakfast for 4 mornings. Yes, we think it’s genius too.

INGREDIENTS
⅔ cup gluten-free quick-cooking oats
¼ cup chia seeds
1 pinch salt
1 ½ teaspoons coconut sugar
1 large pinch vanilla protein powder
1 ½ cups unsweetened almond (or other non-dairy) milk
⅓ cup frozen raspberries

INSTRUCTIONS
1. In a medium bowl, stir together the oats, chia seeds, salt, vanilla powder, and coconut sugar.
2. Whisk in the almond milk and stir for 30 seconds to make sure everything is combined. Stir in the raspberries and refrigerate for at least 10 minutes and up to 4 days.

Makes 2 servings.
