14-Day REBOOT – Day Seven Dinner
This recipe is hearty and delicious. I love the depth of flavor these ingredients bring and the instructions are minimum. It will taste like fine dining without the reservation. They always say to eat your colors, and this list of vegetables will not only make your meal beautiful to look at, but it will also fill you up with all the nutrition you need.

RED CURRY CHICKEN
1 Tbls coconut oil
1 lb. chicken breast, chunked
1 Tbls Thai red curry paste (watch ingredients for sugar)
1 cup zucchini, sliced
1 red bell pepper, sliced
½ small onion, chopped
1 can full fat coconut milk
2 Tbls cilantro, chopped
2 cups broccoli, chopped
4 lime wedges for serving
Brown chicken in coconut oil.
Add in the vegetables and cook until slightly cooked.
Add coconut milk and simmer for 5 minutes.
Garnish with avocado slices, cilantro and lime wedges.
