Summer goes by quick these days, even with the blazing heat we experience. Whether you are welcoming the ease of summer, celebrating American holidays or if you are trying to hold on to summer a little longer try this Watermelon Arugula Salad. It’s fresh and delicious and pairs with Grilled Chicken nicely so you can keep enjoying those outdoor summer barbecues as long as you can. This salad will surprise you how the ingredients create a tangy, sweet compliment to anything you decide to serve it with or even by itself.

This is one of my favorite salads because it is so simple to throw together. The dressing can be made in advance while the rest sit by and chill out in the refrigerator. It is best when you dress it right before serving. Enjoy your health! Enjoy your summer!

INGREDIENTS

6 cups watermelon, cubed into small bites
2 cups blueberries
5 oz. arugula
6 oz. feta cheese
½ cup raw almonds, sliced (I buy them pre-sliced)
½ cup grape seed or olive oil
1 lime, juiced
1 tsp. Honey, organic & raw
1 garlic clove
Salt & Pepper

INSTRUCTIONS

STEP ONE:
Make dressing by adding all ingredients to a blender and pulse until smooth and creamy.

STEP TWO:
Pour dressing over the salad ingredients. Done. NOTE: Chill for 30 minutes if your watermelon was not already cold.

SERVING SUGGESTION:
Chill salad ingredients before making. After you mix it together, serve immediately. Cool and sweetly perfect along side grilled chicken.
