14-Day REBOOT – Day Eight Lunch
This meal is a reason to celebrate. The Turkey Dinner that you already made, is now the featured ingredient in your lunch today. We are calling this a ROUND TWO MEAL because it takes the efforts of one meal and multiplies itself. I love the taste of sweet and salty together so taking the turkey with the apple creates a burst of flavor that will leave you wanting more! The homemade salad dressing is simple with only a few ingredients. This recipe is quick, easy and can also be turned into an on-the-go snack or a Jar Salad.
JAR SALAD: Make this “travel friendly” by layering the ingredients in a mason jar and storing in the refrigerator.
In the bottom of a 1 quart glass jar with fitting lid, add all ingredients, including the dressing.
Top with greens. Fill it up.
A wide-mouth jar makes it simple to empty onto a plate. The dressing and flavorful toppings spill over the greens when turned up-side-down.

SWEET TURKY SALAD (round two)
1 cup diced turkey
½ cup diced Granny Smith apple
¼ cup chopped pecans or walnuts
5-10 dried cranberries (no sugar added)
1 Tbls red onion, sliced thin
A bed of greens – Spring Mix, Romaine or Spinach
A few drops of stevia
Pinch of salt
Juice from half of a lime
¼ cup olive oil
Add all dressing ingredients to a blender
Toss with ingredients and serve over a bed of greens
