14-Day REBOOT – Day Thirteen Dinner

If you love Mexican food than this recipe will hit every craving! It is an explosion of flavor with the tomato, avocado, onion and your choice of salsa. What is so great about this recipe is that you can control the flavor with how much ingredients and spices you put in. It’s custom to your pallet and full of nutrients that your body needs.

YUMMY TACO BOATS

INGREDIENTS
1 LB. grass fed ground beef
1/4 cup chopped onion
Salt & Pepper
Your favorite taco seasonings (chili powder, cumin, garlic powder, cayenne pepper)
Romain lettuce stalks
Tomato
Onion
Avocado
Salsa

INSTRUCTIONS
STEP ONE:
Brown the ground beef with seasonings. Add the onion and cook until the beef is no longer pink. Drain fat and let cool for a few minutes.

STEP TWO:
Arrange lettuce “boats” on a serving platter. Scoop meat mixture into each boat. Top with your favorite toppings. (Example: avocado, pico de gallo, shredded cabbage, salsa (watch ingredients), sprinkle with cilantro).

Serve with Cauliflower Rice (add taco seasonings to “rice” when cooking).

FuN Plan options:  Cheddar cheese and sour cream or greek yogurt.

CAULIFLOWER RICE

Grate a head of cauliflower. Add 1 Tbls neutral oil, like grape seed oil, to a medium high heat. Add the cauliflower and sprinkle with your favorite taco seasonings, salt and pepper. Cook and stir for 3 minutes and serve.
